Sick of eating Hot Pockets and microwavable pizza? Living in a dorm with just a microwave to serve as your only cooking appliance isn’t easy. When you go grocery shopping, you probably go straight to the freezer section, but tonight skip the frozen dinner and prepare this three course meal in your dorm. Heck, you could even host your own dinner party. All recipes yield four servings, and none of them require a stove.
Appetizer: Fruit-topped crackers
Spread cream cheese on crackers and top with fruit.
Main course: Tuna and Noodle Casserole
Pour chicken broth into a three-quart microwave-safe casserole dish. Cover and microwave on high three minutes or until broth comes to a boil. Add noodles, cover and microwave on high for four minutes. Stir noodles and broth for about one minute. Microwave again for another three minutes, and let it stand for another two minutes.
Add in tuna, soup and half a cup of shredded cheese, and microwave on high for another five minutes. Mix in peas. Sprinkle a layer of cracker crumbs and the remaining cheese on top and microwave for one minute or until cheese melts.
Desserts: Cherry and Graham Cracker Cobbler
Crust:
Filling:
In a large, microwavable bowl, combine all dry ingredients and mix well. Put in butter and place half of crumb mix in a microwave-safe nine inch square baking pan. Spread filling evenly on top of crust. Microwave for four minutes. Sprinkle leftover crumb layer on top, and microwave for another three minutes.
